Fettuccine Alfredo (di Roma)

Dentro de las recetas de los fettuccines, sin duda alguna la mas famosa es: Fetuccine Alfredo. Una receta que fue creada por Alfredo di Lelio en su restaurante; duplicó la cantidad de mantequilla que usaba para hacer el spaghetti al burro (spahetti con mantequilla) y le agregó queso parmesano. Así nació esta receta tan delishos que les dejo el día de hoy. Hay muchas variantes en las que le añaden crema, o preparan la salsa en una sartén. La receta original es sencillísima de preparar y muy rápida.

Fettuccine Alfredo (di Roma)

  • 350 gr. de fettuccine al huevo (hay de sémola, pero es mejor de huevo)
  • 1 barrita de mantequilla cortada en cuadritos
  • 1/4 T queso parmesano recién rallado
  • Sal y pimienta
Preparación: El fettuccine se coce de acuerdo a las instrucciones del paquete, ya que está al dente (un poco duro de la parte de enmedio), se cuela pero se reserva el agua en el que se coció. La pasta se pone en un recipiente grande de aluminio si se tiene, si no, en algún recipiente pre-calentado y se le añade el queso. Se revuelve muy bien a que se derritan la mantequilla y el queso, se le va agregando poquita agua de la que se había reservado para evitar que la salsa se ponga dura, se sazona con poca sal y pimienta y se sirve inmediatamente.

    With reference of your article (for which I thank you), I have the pleasure to tell you the history of my grandfather Alfredo Di Lelio, who is the creator of “fettuccine all’Alfredo” in 1908 in the “trattoria” run by his mother Angelina in Rome, Piazza Rosa (Piazza disappeared in 1910 following the construction of the Galleria Colonna / Sordi). This “trattoria” of Piazza Rosa has become the “birthplace of fettuccine all’Alfredo”.
    More specifically, as is well known to many people who love the “fettuccine all’Alfredo", this famous dish in the world was invented by Alfredo Di Lelio concerned about the lack of appetite of his wife Ines, who was pregnant with my father Armando (born February 26, 1908).
    Alfredo di Lelio opened his restaurant “Alfredo” in 1914 in Rome and in 1943, during the war, he sold the restaurant to others outside his family.
    In 1950 Alfredo Di Lelio decided to reopen with his son Armando his restaurant in Piazza Augusto Imperatore n.30 "Il Vero Alfredo" (“Alfredo di Roma”), whose fame in the world has been strengthened by his nephew Alfredo and that now managed by his nephew Ines, with the famous “gold cutlery” (fork and spoon gold) donated in 1927 by two well-known American actors Mary Pickford and Douglas Fairbanks (in gratitude for the hospitality).

    I must clarify that other restaurants "Alfredo" in Rome do not belong to the family tradition of "Il Vero Alfredo – Alfredo di Roma" in Rome.

    1. Wow Ines, I am speechless! Thank you so much for reading my blog, you have no idea what it means to me. When I was searching for the recipe, I wanted to find out also the history of the dish, and I read about your grandmother. I went to Italy about 16 years ago and had the enormous pleasure to eat in your restaurant in Piazza Augusto.
